Best pizza slice: New York-style or Chicago deep dish?
Nick Kindelsperger at Serious Eats says a New York pizza is all about balance. Here's how he puts it.
Every element on a New York slice is about the greater good. The hope is that the crust, sauce, and cheese combine to form one balanced bite. If one aspect stands out too much, the whole slice falters (or literally collapses on itself).
In contrast, deep dish is all about the individual expression of all the ingredients. This is a big pizza and it leaves a lot of room for the ingredients to take the stage.
Deep dish is sort of the opposite. It's just plain bigger in every way, making it is easier to isolate each element and evaluate it. This makes it possible to genuinely appreciate one element, even if another doesn't work as well.
